GAZPACHO MUY SUAVE. MILD GAZPACHO



 


ESPAÑOL

Ya estamos en verano y apetece comer cosas más fresquitas y ligeras. Hoy os presento una receta clásica pero con mi toque personal: gazpacho muy suave. La he probado de hacer varias veces y del modo más suave que me sale es la que os propongo a continuación. No le pongo cebolla. Cambio el ajo por alioli y el vinagre de toda la vida por el de Módena. Espero que os guste. ¡Allá va!
RECETA
Preparación: 20 min (más 45 min en la nevera)

INGREDIENTES
·         3 tomates maduros, grandes y carnosos (medio kg aprox)
·         Medio pimiento rojo
·         1 pimiento verde
·         1 pepino
·         2 rebanadas de pan del día anterior
·         Alioli
·         Vinagre de Módena
·         Aceite virgen extra de oliva
·         Sal al gusto
·         GUARNICIÓN: huevo duro rallado, una tostada pequeña y olivas negras laminadas
 
PASOS
Batimos en un bol los tomates troceados (previamente escaldados y pelados). Pelamos y limpiamos el pepino y lo añadimos. Limpiamos y quitamos las pepitas de los pimientos y los batimos juntamente. Remojamos las dos rebanadas con agua. A una le añadimos vinagre de Módena hasta que quede todo el pan marrón. A la otra, le untamos el alioli. Lo añadimos al bol juntamente con un buen chorro de aceite y sal al gusto. Batimos bien. Colamos. Si la textura es demasiado espesa para nuestro gusto, lo rebajamos con agua hasta encontrar nuestro punto. Dejamos enfriar el gazpacho en el frigorífico 45 minutos. Por último, servimos el gazpacho y le añadimos la guarnición.

Summer has come and we like eating fresher and lighter food. Today I present a typical dish with a personal touch: a very mild gazpacho. I have tried cooking it in many ways and the one I like the most is the following I suggest as it is most delicate one. I don’t add onion. I replace garlic for alioli and common vinegar for Módena vinegar.

Preparation: 20 min (and 45 extra minutes in the fridge)

Ingredients
 
·         3 big, ripe and pulpy tomatoes (1/2 kg aprox)
·         ½ red pepper
·         1 green pepper
·         1 cucumber
·         2 slices of bread of the day before
·         Alioli
·         Módena Vinegar
·         Extra virgin olive oil
·         Salt
·         Topping: grated boiled egg, small toast of bread and black laminated olives
 
STEPS
Wash all the vegetables. Blanch the tomatoes and peel them off. Cut them and put them in a bowl. Peel the cucumber, slice it and add it to the bowl. Take the peppers and remove their seeds, slice them and add them to the bowl as well. Blend all the vegetables. Soak both bread slices in water. Add Módena Vinegar to one of them and spread alioli to the other one. Add them to the bowl and also an oil stream and salt. Blend carefully and generously. Strain the mix. If the texture is too thick for you add water. Cool the gazpacho in the fridge for 45 minutes. Last, serve it and add the topping.
